Have you ever made your own pasta? No? Well I’m here to tell you that you should. Just go for it. It’s easy! And you’ll get to make tasty meals like homemade ravioli or lasagna or even simple noodles. Trust me, once you try fresh pasta, you’ll wonder what the heck is it that you’ve been eating all these years. Fresh pasta = nothing at all like “normal” pasta.
Let’s talk about what you’re going to need: 1) eggs 2) flour 3) rolling pin and (this is optional, but it will make your life much easier) 4) a pasta machine, like this one from Williams-Sonoma: (Image from Williams-Sonoma)

The pasta machine I have is very similar to this one but I bought it for 20€ at Casa Shops. I think they usually have them in stock.
So, how to make your own pasta: the recipe calls for one large egg for every 100g (3.5oz) of flour. That’s it. You just mix those ingredients using that ratio, and knead the dough for a couple of minutes. You should add a pinch of salt, of course.

When the dough is kneaded, use a rolling pin (you’ll need extra flour to dust the rolling pin) to roll it out until you reach the desired thickness, or until you can “insert” it into the pasta machine. You can use the machine’s attachments to make noodles, or make pasta rectangles so you can cook an awesome lasagna from scratch, just like this one (I’ll be sharing the recipe soon!).
This recipe for pasta opens up a whole world of possibilities – Raviolis! Lasagna! Awesome noodles! You can even mix into the dough some (cooked and drained) spinach to obtain green pasta. Give it a try if you haven’t already and tell me how it went.

Making pasta is super easy, trust me! You just need some patience. And lots of flour for dusting so it won’t stick everywhere
I love making homemade pasta! We hardly ever use store bought pasta anymore. When you finally do get your KitchenAid mixer, get the pasta roller attachment. It is wonderful!
My next project is pumpkin ravioli, but I also really want to try the spinach pasta!
Oh the pasta roller attachment is definitely on my list! I actually held off on buying an ice cream maker and a pasta machine for a bit because I know that once I have a KitchenAid I’ll be buying all those attachments and getting rid of them. But they were really cheap and I’ve used them a number of times already, so they’ve paid off!
You are spot on- once you’ve had homemade pasta, you’ll NEVER go back. I’ve made pasta with my sister a few times and from the very first moment, it changed my life.
I *need* to get a pasta machine of my own though. So tempting as we have a Sur La Table just down the block!!
Isn’t it so much better than “normal” pasta? And so easy to make. Having a Sur La Table down the block from my home would be a disaster for my wallet, for sure!
We’ve tried this before and made raviolis (filled with squash!) and even gnocchi (which was terribly time consuming). I sort of want to get the KitchenAid mixer attachment for this.
The attachment would be wonderful! Once I buy a KitchenAid (hopefully next year or so… they’re very expensive here, around 450 euros expensive) I’d love to slowly buy the pasta attachment, the meat grinder, and the ice cream maker
