Okay, so it’s really two bowls if you count the frosting. But it’s a really easy cake to make – perfect for a birthday if you’re in a hurry, for example, and it tastes great. I actually baked this yesterday after browsing my Pinterest board, so does it count as my Pinterest challenge? Just kidding. I actually have another thing I want to work on for that challenge, hopefully I’ll be able to get it done by Wednesday!

One bowl chocolate cake
Recipe from Citrus and CandyCake
- 150g (5.3oz) butter
- 180g (6.4oz) brown sugar
- 100g (3.5oz) dark chocolate (I use Valrhona)
- 50g Dutch-processed cocoa (I use Valrhona)
- 160ml (2/3 cups) milk
- 1/2 tsp instant coffee
- 3 large eggs, room temperature
- 170g (6oz) all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Preheat oven to 340ºF / 170ºC.
- In a bowl over simmering water, mix butter, brown sugar, dark chocolate, cocoa, milk and coffee until butter and chocolate are melted. Remove bowl from heat and let it cool for about 5 minutes.
- Add the eggs and whisk well; then mix in the flour, baking soda, baking powder, and salt.
- Pour the batter onto a brownie pan and bake for about 45 minutes or until a toothpick comes out clean.
Frosting
- 100g (3.5oz) dark chocolate (I use Valrhona)
- 50g (1.75oz) butter, softened
- 120g (4.2oz) icing sugar
- pinch of salt
- 1-2 Tbsp milk
Melt chocolate. Beat in the softened butter. Sift in the sugar and salt, and beat well. Add a bit of milk, if needed, until it reaches spreading consistency. Ice the cooled cake and let it set before serving.

Yeah, I thought about making it pretty and properly frosted, but I like that I kept it simple because it makes a great birthday cake in a pinch.
