It snowed this weekend! Which is cool because it never snows here, but a bummer because we didn’t get to work on the trim for the passthrough, since we needed to use the saw outdoors in the patio. So the weekend was spent relaxing and preparing for this crazy week ahead. Unfortunately crazy week means no Pinterest challenge for me, sadly. Maybe next time. Friday evening we went out with some friends, had a drink, played some darts… it had been ages since I played and I was terrible, hah. Saturday morning we had to run some errands – went to the supermarket and vowed then and there, we are not going shopping on a Saturday morning ever again. Everything is closed here on Sundays so everyone seems to concentrate their shopping Saturday mornings. We made a quick trip to a grocery store that sells really cheap avocados, just to try them out, and I’m happy to say they’re very good! We’ll definitely be buying more from them in the future. Other than that, the weekend was pretty uneventful. I’m really looking forward to Spring.
Last weekend, before my uncle came to help us with the door switch, I baked a batch of cookies from a new recipe. I wanted something chewy so these were really nice, I’d say they’re best with a cup of tea. Enjoy!

Soft Brown Sugar Cookies
Adapted from Epicurious
- 1 1/2 sticks unsalted butter, room temperature
- 1 1/4 cups dark brown sugar (I used half normal brown sugar and half muscovado instead)
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 2 cups flour (all-purpose)
- 2 tsp baking soda
- 1/2 tsp salt
Preheat oven to 375ºF (190ºC). Beat butter and brown sugar until smooth and creamy, add the egg and vanilla and keep mixing. Add the dry ingredients and beat until incorporated. Scoop teaspoons of dough onto baking sheet and bake until edges are golden brown, 8 to 12 minutes.

I have had such a cookie craving lately (I believe it’s because those Girl Scout Cookies will be arriving soon) but now I’m tempted to give these a go. Thanks for the recipe!

Same thing here! A few years ago we used to play fairly often so I was decent enough.
You always make my mouth water!!! My husband usually does the grocery shopping on Saturdays mornings really early…like 645am early since it is always busier in the afternoons (plus we don’t want to be grocery shopping in the afternoon and the kids are already awake).
Um, wow, 7AM?! Supermarkets don’t open until 9-10AM here!!
